I am loving all these casserole dishes, lately. They are so easy to throw together and cook in a matter of minutes. Growing up, my mom used to make something called Chicken Divan on Sundays and it was my FAVORITE.

I was going to make it, then decided to try a new spin on the recipe, a casserole dish.

I turned this into a casserole by cutting everything up into bite size pieces.

It was quite the hit at our house, and I have been making it weekly for the past month. My whole family loves this. And I am relieved to make this easy dinner weekly. Kids do not like broccoli florets, not in this case.

This easy recipe is so quick to throw together and it has an amazing flavor. Plus you can have this with white rice, brown rice or bread.

How to make Easy Chicken and Broccoli Casserole:

Step 1: Combine the sauce in a bowl. Don’t try to combine it all in the casserole, because it won’t evenly distribute.

Step 2: Be sure to cook your broccoli and chicken beforehand. They won’t get enough cook time in the oven, so this step should be done ahead of time to get a tender chicken and broccoli.

Step 3: Add in the sauce. You can mix it in a pan, or use another bowl. I usually mix it in the pan to avoid another dish to wash.

Step 4: Add your bread crumbs and your cheese, then bake.

Step 5: Serve and enjoy.

The chicken broccoli casserole recipe is not only an ultimate comfort food recipe it is healthy. It will take only a minute to be your favorite meal the first time when you bite at it.

Want to restore it for the next day? Restore the leftovers in a zip lock bag and put it in a freezer. Follow the baking process again when you are ready.

What other cheese would be good with this recipe?

I love this recipe, because it is so versatile, and you could easily switch out simple ingredients as needed. Such as onion powder, fresh garlic, olive oil, or black pepper.

We love adding vegetables, and different cheeses to this recipe.

This recipe calls for sharp cheddar cheese, however, you could use mozzarella, pepper jack cheese, parmesan cheese, cream cheese, cheddar jack, provolone, or any other favorite cheese.

You could also use one cheese, and top it with freshly grated parmesan cheese. It tastes amazing. The great thing is you can make it from leftover chicken and frozen broccoli. It’s a microwave-safe dish and saves much time on the stove.

What vegetable could I use in place of broccoli?

My husband is not a big broccoli lover. I don’t blame him. It has a terrible smell, and a really bitter after taste. However, in this recipe, the broccoli tenderizes and is smothered in cheesy goodness.

I could barely taste any hint of broccoli.

If you are totally opposed to broccoli, we do have a few options for you. Here is what we recommend:

  • Asparagus
  • Zucchini
  • Cauliflower
  • Peas and Carrots
  • Corn

You could really use any of your favorite vegetables, but these are the ones we recommend for this particular recipe.

Ingredients

  • 10.5 ounces cream of chicken 1 can
  • ½ cup sour cream
  • 1 teaspoon lemon juice
  • ½ teaspoon curry powder
  • 4 cups fresh broccoli chopped
  • 3 boneless, skinless chicken breasts cooked and cubed
  • ¾ cup shredded sharp cheddar cheese
  • ½ cup soft bread crumbs
  • 2 Tablespoons butter melted

Instructions

  • Preheat oven to 350 degrees.

  • Cook broccoli in boiling salted water until tender, then drain.

  • In a small bowl mix together cream of chicken soup, sour cream, lemon juice, and curry. Set aside.

  • In a 9 x 13 greased baking dish add broccoli and chicken.

  • Pour soup mixture over top and mix together.

  • Sprinkle with grated cheese. Combine bread crumbs with butter and sprinkle on top.

  • Bake for 25-30 minutes.

  • You can serve this with white rice, brown rice or bread.

    In the "Easy Steps" section you mentioned cooking the broccoli and spinach ahead of time. I don't see spinach in the actual recipe. Do you ever use spinach or was that just an error...I'll try spinach too if you've used it successfully!

    Soft bread crumbs are just regular bread broken into small pieces. When you add the soft breadcrumbs to the butter and add to the top, they get golden and buttery crunchy on top of the casserole.

    I don't buy processed foods like canned soups. Also, sour cream is a big no-no in our house b/c of high cholesterol. Another of your recipes (a kind of marzetti) also called for an 8-ounce block of cream cheese to feed 4! Yikes! Let me check some other plans for lower fat content...or do you have some?

    Plain Greek Yogurt can be subbed in for sour cream.

    Freeze before you bake or after? Add the cheese and breadcrumbs before the freeze? Trying to stock a freezer for a family in need.

    I would freeze before baking. Add cheese and breadcrumbs before freezing. Then write on the top of the foil to thaw and freeze and then the heating temp and time. You are awesome to help this family in need!
